You ladies flatter me by asking for the recipe for the chicken salad. I am touched by your request. I sent the recipe to Southern Living magazine about 30 years ago when I was staying home with my preschool children and had plenty of time for cooking experiments! Of course the kids didn’t like the chicken salad but Skip and I did! It was a nice surprise that Southern Living published it.
Almond Chicken Salad
4 cups diced cooked chicken
1 cup thinly sliced celery
1 medium sized green pepper, chopped (I omitted this Friday night as I didn’t have one!)
2/3 cup sliced stuffed olives (optional – I used these in Fri.’s recipe)
1 t. salt (or to taste. I use less or none b/c olives are salty.)
¼ t. pepper
2 t. grated onion
2/3 cup mayonnaise
¼ cup commercial mustard-mayonnaise sandwich sauce (Durkee’s)
2/3 cup toasted slivered almonds
Combine first 7 ingredients. Combine mayonnaise and sandwich spread; add to chicken mixture, and toss lightly. Chill. When ready to serve, add almonds. Yield: 6 servings.

Garden Party Wrapup
22 ladies enjoyed a wonderful spring supper and fellowship time at the home of Catherine Robinson on Friday evening. The tables were beautifully set with Catherine's family silver and dinner plates, along with unique fresh flower arrangements. The pot luck dishes were all fabulous, but I must mention the especially delicious chicken salad offered by Bobbie Midkiff, which we later learned was actually a recipe published in Southern Living a few years ago! I hope Bobbie will let us post the recipe on the blog sometime soon.
Cindy Bush, the party chair, delighted us with many fun door prizes. Sharon McDill was honored with a retirement gift, and shared some meaningful words with us. Also, we announced our officers for the 2010-11 year. They are:

Women's Auxiliary plans exam gift packet for ladies in Lolley Dorm
Exam time at Southeastern is fast approaching! And with it comes stress, sleeplessness, and cramming! The Wake Forest Chapter of Southeastern’s Women’s Auxiliary is joining with the Raleigh and Wilson chapters (and Pam Reed in Winston Salem) to provide exam gift bags for our women students residing in Lolley Dorm. We want to bless these ladies for their diligence in preparing for ministry and offer some TLC while they complete this semester. We invite you to join us in providing the items for the bags - and if your schedule permits, to help us assemble and deliver the bags.
For some of you receiving this email, your membership has expired. We would love to have you back as a member; however, your help with this project isn’t tied to your current membership!
We will be preparing 35 bags. (We already have the bags). Food items (individually wrapped), office supplies, and spiritual encouragement in some form are suggestions. Perhaps you have other ideas in mind as well. If you don’t have time to help but would like to make a monetary contribution to help purchase items, that would also be acceptable.
Plan to have your contributions in the Womens Life Office in the Ledford Center by Friday, May 14 @ 4:00PM.
Please consider joining us at Lolley Dorm Monday, May 17 @ 10 AM to fill and deliver the bags. This has always been a fun time of fellowship and service in years past. Afterwards we plan to lunch at the tea room in Wake Forest if that fits into your schedule as well!

SWC Easter Egg Hunt
We had a wonderful Easter Egg hunt! Thanks so much to Cindy Bush for graciously hosting the group of parents and kids, preparing great refreshments (see pic) and telling the Easter story. The children listened carefully as Cindy recounted the death and resurrection of our Lord using both a colorfully illustrated book and the resurrection eggs. Thanks, also, to Beth McKenzie for preparing eggs and to Debbie Ladd for coming early to hide them. If you couldn't make it this year, Cindy has agreed to make this an annual SWC event, so you'll have another chance to join in the fun!

Valentine's Luncheon a Hit!
